Paleo-Pizza


While I am not on a Paleo diet, the recipes for them are fair game. Hence this paleo-friendly pizza.  I want to emphasize that I found this on the Peace Love and Low Carb Blog and for the most part the only things I have added were low fat cheeses and sun dried tomatoes. 

Ingredients:

Crust:
2 Eggs
4 Oz. Reduced Fat Cream Cheese
1/4 Cup of grated Parmesan Cheese 
1 1/4 Cup Reduced Fat Shredded Mozzarella Cheese
1/8 Tsp Garlic Powder with parsley 
1/8 Tsp Onion Powder
1/4 Tsp Italian Seasoning

Pizza Sauce: 

8 oz. Can Tomato Sauce
6 oz. Can Tomato Paste
½ tsp. Dried Oregano
½ tsp. Dried Basil
½ tsp. Dried Parsley
½ tsp. Minced Onion Flakes
½ tsp. Onion Powder
¼ tsp. Garlic Powder

Toppings:

Reduced fat Mozzarella cheese
Turkey Pepperoni
Sun Dried Tomatoes in Olive Oil

Instructions for the crust:

1. Blend until mixed the eggs and the cream cheese.

2. Stir in the rest of ingreedients. 

3. Line a 9x13 in baking pan with parchment paper 

4. Poor in the "dough" 

5. Set oven for 375 degrees Bake for 20-25 minutes on the middle rack. 

6. Take parchment with crust inside out place on cooling rack for 9-10 minutes. Once cooled use a spatula to make sure crust is loose on the parchment.

Instructions for the Sauce: 

1. Set Stove to Low

2. In a sauce pan combine sauce ingredients and stir, let simmer for 10 minutes. 

Instructions for the Pizza:

1. Place Parchment and crust back into baking dish. 

2. Use a spoon to spread sauce over the crust. 

3. Add sun dried tomatoes and turkey pepperoni

4. Cover sauce, crust, sun dried tomatoes and pepperoni with low fat mozzarella cheese. 

5. Bake  for another 15-20 minutes on 350-375 degrees. 

6. Let cool for 10 minutes then cut into squares. 

Bonus Tortilla Pizza:

1. Use Pam on a 12" Pizza Pan

2. In the center of the pan place a Whole Wheat Tortilla

3. Cover In sauce, add sun dried tomatoes and pepperoni. 

4. Bake on 350-375 degrees for 15 minutes. 

5. Let cool for 5-10 minutes.
